Widder Restaurant

A journey for the senses
The Widder Restaurant extends over two of the nine houses that make up Widder Hotel: “Kleinen Widder” and “Haus zum Bauknecht”. The latter features an impressive, preserved ceiling construction, a rare example of a medieval architectural style.
Today, it sets the stage for head chef Stefan Heilemann’s notion of haute cuisine.
At Widder Restaurant we celebrate perfect craftsmanship and products. From meat to vegetables and wine, we cultivate a close relationship with our producers. Our French-inspired cuisine is combined with influences from more exotic regions. Each dish is a journey for the senses, a fusion of freshness and depth.

Stefan Heilemann
“Heilemann cooks traditional dishes. But Heilemann also does Asian cuisine – both at the very highest level. A culinary cocktail that astounds us”, writes Urs Heller, editor-in-chief of GaultMillau Switzerland. His passion for his craft inspires Stefan Heilemann to constantly interpret the culinary world anew. His virtuoso creations are characterized by a recurring acidity, sometimes subtle in the background, sometimes as the focal point, making each dish distinctive.

Massaman Duck Bao – Chef’s Edition by Stefan Heilemann
Two worlds, one bite: Together with Zurich’s Dim Sum manufactory Madame Sum, our Head Chef Stefan Heilemann presents his beloved Massaman Duck Bao from the Widder Restaurant in an exclusive edition created for home enjoyment.
The bao reflects Heilemann’s signature style of precision, depth, and Southeast Asian flair: a fluffy dough, duck leg cooked sous-vide for 24 hours, and a rich Massaman curry sauce with coconut milk, cinnamon, star anise, cumin, and tamarind.
The limited Chef’s Edition is available exclusively through Madame Sum.
